Semillon
lovers, rejoice! Some mighty fine wine has been created for your thorough
enjoyment. Sourced from far West Texas, this rich textured wine has the right
balance between full aromantic sensation and palate fulfilment. Notes of pear
and some honey will delight your wine senses followed by a bit of lemon. Repeated
sipping sessions will also reveal that fig profile, as well. There is also some
decent minerality to this fine creation, too, so do not hold back on a gourmet
food paring for this out of this world Semillon. Santé!

There is no planned wine bottle that is to be opened or set time that it will be tasted. It is what ever just happens to be opened...for the moment. Dry Bienvenue – NV; Airis'Ele Vineyards; Fredericksburg, Texas
Sourced
from the Texas High Plains AVA, this sparkling white wine blend can be really satisfying
when you want a nice refresher. Featuring fruit sourced from Wilmeth Vineyards,
it has a good balance of 55% Roussanne, 25% Riesling, and 20% Viognier. This
lovely white offers some enticing pear and apple notes coupled with nice minerality
in this fizzy jewel. There is even a bit of a buttery note to this fine treat,
as well. With medium acidity and a refreshing soothing feeling, this bubbly
treat can also be a great way to start off the long day for brunch through
dinner and beyond. Cheers!

Wildseed Vineyards - Fredericksburg, Texas
Many
long time Hill Country travelers are aware of the 200-acre Wildseed Farms location
along highway 290 towards Fredericksburg. As one of the largest working wild seed
farms in the U.S., it has always been a must stop destination for visitors. The
latest expansion of this business is now a vineyard and winery. John and Marilyn Thomas started this dream
with about 28 acres in 2015 which expanded to 42 acres featuring 13 varietals
of grapes. Coming from generations of farmers, this next step seemed only
fitting as they ventured their feet into the growing Texas wine world. An
additional 12 acres of vines were added in 2024, so this is quite a burgeoning
vineyard. Many HWY 290 wine travelers may remember Wedding Oak tasting room
being located here for a while. With renovations and an expanded tasting room,
Wildseed wines officially has its own tasting room to call home.
Wine
production began in 2019, and their own label began popping up in 2021. Dabs Hollimon, from the former 1851 Vineyards
days, has assisted with their launch as a wine consultant. Their fruit is
currently sourced from both the Texas High Plains and the Hill Country AVAs.
There are plenty of different wines to sample on their lengthy tasting menu, so
make your flight selection and prepare for some fun as you sample through some
interesting finds. The 2022 Oaked Albariño was the first varietal to sample. This white wine has light oak notes with touches
of pear and lemon and a nice tropical sensation to it that you will find very
enjoyable. The second wine sampled was the 2021 Trebbiano. This classic Italian
varietal had some good minerality to compliment the apple and lime notes. For the Rosé wine, the Primrose was sipped.
This Texas Hill Country Mourvèdre Rosé was a beauty with a sweetness on the nose
but smooth and dry with notes of melon across the palate. Venturing into the red wines, the 2019
Sangiovese was sampled next. This Texas High plains AVA sourced fruit poured a light
red hue in the glass with notes of plums and cherries. The second red to taste
was the 2021 Aglianico. This Hill Country sourced wine is one mighty red featuring
bold cherry notes, great acids, and a good finish. A wine worthy of pairing
with a nice Italian feast. The last red to
try was the 2018 Tannat. This mighty bold red wine was from their beginnings
and is full of rich flavor and mouthfeel for those bold red wine lovers. As an
extra treat, both the white and red Sangrias were sampled. Made fresh, you cannot
go wrong with all the lush fruit and vibrancy that either Sangrias has to offer,
especially on a warm day.
With
the extra-large tasting room, outdoor patio seating, and great hospitality,
there is much to savor and enjoy during a stop at this winery. Enjoy all you
can, walk around, and take in all the magic that this hill county location has
to offer. You will be pleased with their wine selection and should be able to
find a few new favorites to take home like we did. Cheers!

Malbec – 2015; Bending Branch Winery; Comfort, Texas
This
wonderful full-bodied Malbec has been aging quite nicely over the past decade.
Sourced from Newsom Vineyards of the Texas High plains AVA, this mighty red
wine clocks in at 15% abv for you serious red wine lovers. Black cherry and
plums will be the main notes on the palate even at this age, which is a
wonderful surprise. You may also discern notes of pepper and a touch of
leather, too. It is a very smooth treat to enjoy and still pairs well with
protein dishes. It should last at least a few more years. Sip and savor again
in the future if you put some of these bottles away in our cellar for later.

Peach Wine – NV; Maydelle Country Wines; Rusk, Texas
These
mighty East Texas grown peaches pack a lot of wholesome satisfaction in this
flavorful fruit wine. You get just the right amount of sweetness coupled with
some tropical and citrus sensations. You
might pick up on a bit of tartness here and there, but nothing to detract from
your favorite dessert pairing. Come to think of it, sip this one alone during
those Texas cold blast or heat wave days and you’ll be just fine. Cheers!

Roussanne – 2021; Pebble Rock Cellars; Johnson City, Texas
What’s
in a great Roussanne from a small boutique winery? A lot of labor, love and
attention to the little details that make a difference! A lovely white wine to
swirl in the glass but take a sip and savor everything from those wonderful
aromas to a great mouthfeel for this pleaser. You may discern notes of pear and apricot melded
with a touch of mango. This bottle has nice acidity with one of those very
satisfying “Ahhh” finishes. A wine like
this pairs nicely with a broad variety of food and will delight you from
appetizers to dessert pairings. Most enjoyable. Cheers!
